Phidus Cuisine is co-owned by French chef Stephane Dussau and his Irish partner Caroline Philp. The name is derived from a mix of their surnames and is pronounced as “Feedus”.
This duo embraces the seasons with colourful, vibrant and fun food, using as much locally sourced Gisborne produce as possible. Both keen gardeners much of their weekly treats stem from what they harvest from their backyard.
Caroline is the main face of the business as Stephane is more people shy and prefers to take a back role in the production process. They co owned the Marina Restaurant for 14 years before launching their new business venture.
Their market shop has baked goodies, sourdough bread & viennoiserie, lunch boxes, low gluten & vegan treats – changing weekly. They also are available for private catering, parties, functions and soirées.
